Chef Frank Barajas and his culinary team is offering a special menu at Pequín Coastal Cocina at Vespera Resort on Pismo Beach, for the restaurant’s first Thanksgiving celebration. The chef’s Baja-Coastal cuisine is highlighted by dishes that offer truly authentic Mexican food created with innovative whimsical touches. The prix-fixe menu starts with a choice of Pomegranate Guacamole (vegan) or Pumpkin Bisque with guajillo pepper, pumpkin seeds and cinnamon crema. Entrees offer Citrus Rubbed Turkey with confit dark meat and orange scented turkey gravy, Warm Spiced Delicata Squash with farro stuffed pepper, apple, and dried fruit (vegan) or Beef Prime Rib with Pequín spice rub au jus ($10+ addendum). Accompanying sides are Potato Puree with smoky chipotle butter, Baked Sweet Potatoes in spiced piloncillo syrup (vegan without the added house made ricotta), Jalapeño Bread Stuffing and Cranberry Sauce with canela cinnamon and orange. Special holiday desserts are Dulce de Leche Pumpkin Tart with whipped cream or Mexican Chocolate Mousse (vegan). Special Thanksgiving cocktails include Pequín Top Shelf Margarita and Sage Bee’s Knees (at an additional charge). $80 per person plus tax, gratuity and beverages for Three Courses plus sides.
