Saturday, December 24, and Sunday, December 25, from 5:30 to 9 p.m. Chef Frank Barajas and his talented culinary team have created a festive three-course dinner for friends and family celebrating together on Christmas Eve and Christmas Day. First Course choice is a Salad composed of winter greens, pomegranate arils and goat cheese or Apple Butternut Squash Bisque with pepita seeds. Second Course selection is Prime Rib accompanied by potato puree, creamed rainbow char, creamy horseradish and au jus or Veggie Enchilada Nogata with arroz verde and beans. For the Third Course, guests will savor either Eggnog Con Leche or Apple Pie with dulce de leche. The customary menu will not be offered on these holidays.
